Going through a purse I seldom use, I came across a hand-written recipe for Pineapple Upside-Down Cake. In 1989, before flying back to North Dakota for the first time since moving to Maryland, I had carefully copied down the recipe from a Betty Crocker cookbook. Pineapple Upside-Down Cake was my dad's favorite, and I liked to bake it for him for his birthdays. So ever since, I have carried the recipe in my old purse and would bake Dad a cake when I went home to visit.
Father's Day is almost upon us and that got me thinking of my dear old Dad.
